Do you live alone? Do you use a conventional drip coffee maker? Making breakfast, lunch or dinner for one in your coffee maker is a simple way to eat healthy, because most of the recipes you can make using this method are, by definition, healthy. They are also much quicker than crock-pot recipes, use less electricity, keep cleaning to a minimum and can make dinner time a daily adventure to look forward to after a long day at work. Rest assured, you can also make decadent, sweet desserts using your coffee pot.
For Breakfast and Lunch: Fill the reservoir as usual. Place a couple of eggs in the pot. Turn on the coffee maker. Once the pot is filled with water, leave it on for an additional 10 minutes. Drain and soak the eggs in cold water. Make a healthy sandwich or salad.
Experiment. There are many online resources to suit your tastes, time and budget. Here is a personal favorite from NPR’s The Salt: Poached Salmon, Couscous and Steamed Veggies.
