We love coffee and we love yogurt. There is mounting evidence that both offer significant health benefits. If you're like us, you also have a sweet tooth. Ah! We so, so understand. Add just a couple more wholesome ingredients and you're on your way to a tasty and nourishing treat. This simple, deliciously layered Greek Yogurt Coffee Parfait is suitable as a classy dessert when you entertain guests, but it's really meant to satisfy your own guilty pleasure. This recipe makes 4 servings.
Ingredients -
2 cups non-fat vanilla Greek yogurt (or substitute your own favorite vanilla yogurt)
2 tsp honey
2 tsp chilled Dark Roast
2 cups granola with chopped nuts
1 cup Chopped cherries or strawberries
4 whole cherries (or strawberries) for garnish
Method -
In a small bowl, combine Greek yogurt, honey and Dark Roast coffee. Whisk well. Taste and adjust coffee and sweetness as desired.
In a separate bowl, combine granola and chopped cherries or strawberries.
Divide and layer yogurt mixture and granola mixture among four wide glasses or 8 ounce mason jars. Cover and chill at least 30 minutes. Garnish with one whole cherry or strawberry before serving. Note: Layer order and thickness to taste.
